Brief about ISO 22000:

ISO 22000 is the standard published by ISO (International Organization for Standardization) which specifically provides the guidelines for food safety management system. The standard sets out the requirements for achieving food safety for the organization who are handling food throughout its lifecycle. The latest version of ISO Food Safety Management System (FSMS) is ISO 22000:2018 and it was published in 19 June 2018, the standard was developed by the ISO committee ISO TC 34SC 17. This is a management system which follows annex SL structure and consists of 10 clauses. The standard can be applicable to all companies small or big who are involved in food chain business right from farm to table. Food safety management system helps organizations to thrive and grow globally.

ISO 22000 FSMS is a boon for the companies involved in food chain at any point for example (food manufacturers, packers, distributors, warehouses etc.) for attaining food safety. The standard was created on the quality management system approach. The standard follows PDCA cycle (Plan, Do, Check, Act) for continual improvement and risk based approach. Although the standard does not specifically prescribe criteria for food safety functionalities nor it is briefing about the design of food safety management system. Hence the standards asks the organizations themselves to design the management system of food security with the help of guidelines of ISO 22000.

Transition – Key changes of ISO 22000:2005 to 22000:2018:

In the year 2012 ISO decided to adapt High Level Structure (HLS)/Annex SL framework since to unify all management system standards, hence the FSMS has also been inspired to follow this same frame work of 10 clauses. The advantages of having unified High Level Structure are:

  • Upgraded flexibility of standards
  • Simple to integrate and implement with other ISO management system standards
  • User friendly and delivers value

Context of the organization:

In the newly published standard of 2018 version it asks the organizations to appropriately determine the scope which will consider external and internal issues as well as the needs and expectations of interested parties. These are the factors which will affect the management system to attain their goals. Also the new version has specifically includes animal food which means the feed supplied to animals for consumption, the animals here is referred to food producing animals.

Leadership and commitment:

The new version of the standard has emphasized and strengthened the involvement of people for engage and take accountability of the management system and its effectiveness.

Risk Management System:

The previous version of the standard did not have specific clause which emphasizes on risk management system hence the organizations were keen to apply HACCP plans. Now the new version has put forward the concept of risk identification, screen those risks according to their significance and take necessary actions to address those risks, and finally deliver the desired results.

Communication system:

The new version has described that there should be more transparency with respect to communication procedure and its modes. The basic principles of communication should also be included such as what to communicate, who should communicate and how should be communicated.

No mandatory requirement for food safety manual:

The standard has not made compulsory for organizations to maintain a food safety manual but still there is emphasize to have documented procedures for all its critical operations.

Control of Documented Information:

The term “documented information” is been used in the latest version and replaced the term “documents and records”. Now the organizations needs to have standard operating procedures (SOPs) rather than just maintaining documents and records.

Preventive Action covered in Risk based approach:

The High Level Structure/Annex SL do not consider the term “Preventive Action”. Hence the concept of preventive action is been considered since inception throughout the standard under risk based approach and the applicability is specified in several clauses.
